Ingredients

For the Brownie Dough:
  • 1 box 19.5-ounce fudge brownie mix
  • 2 teaspoons vanilla extract
  • 1 teaspoon cornstarch
  • ¼ cup butter melted
  • 4 ounces cream cheese softened
  • 1 egg
For the Peanut Butter Balls:
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
For the Chocolate Topping:
  • 4 ounces semi-sweet chocolate chips

Method

Preheat the Oven:
  1. Preheat to 350°F (175°C). Line a baking sheet with parchment paper or leave it ungreased.
Prepare the Brownie Dough:
  1. Mix the brownie mix, vanilla extract, cornstarch, melted butter, cream cheese, and egg in a bowl until smooth. The dough will be sticky.
Shape the Dough:
  1. Scoop dough into 1-1.5 tablespoon balls and place on the prepared cookie sheet. Smooth edges to form a round shape.
Bake the Cookies:
  1. Bake for 12 minutes or until set but still soft in the center.
Prepare the Peanut Butter Balls:
  1. Mix powdered sugar and peanut butter, then roll into 1-inch balls.
Add Peanut Butter to Cookies:
  1. Press a peanut butter ball into the center of each cookie while still warm. Let cool on the sheet for 5 minutes, then transfer to a wire rack.
Melt the Chocolate:
  1. Melt chocolate chips in the microwave in 30-second intervals, stirring until smooth.
Top the Cookies:
  1. Spoon about ½ tablespoon of melted chocolate over each cookie, covering the peanut butter ball. Allow to set completely.

Notes

  • Chill Dough: If dough is too sticky, refrigerate for 30 minutes.
  • Uniform Size: Ensure even-sized dough balls for consistent baking.
  • Cool Properly: Allow cookies to cool on the sheet before moving to a rack to firm up.
