Ingredients

For the Batter:
  • ½ cup unsalted butter
  • 1 ½ cups granulated sugar
  • 4 tablespoons unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 2 teaspoons vanilla extract
For the Topping:
  • 2 cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 3 cups boiling water
For Serving:
  • Vanilla ice cream

Method

Preheat the Oven:
  1. Preheat your oven to 350°F (175°C).
Melt the Butter:
  1. Place ½ cup of unsalted butter in a 9x13-inch baking dish. Place the dish in the oven until the butter is completely melted. Remove the dish from the oven and set it aside.
Prepare the Batter:
  1. In a medium bowl, whisk together 1 ½ cups granulated sugar, 4 tablespoons unsweetened cocoa powder, 2 cups all-purpose flour, 2 teaspoons baking powder, and ¼ teaspoon salt. Gradually add 1 cup of milk and 2 teaspoons of vanilla extract. Mix until combined. Pour the batter over the melted butter in the baking dish, but do not stir.
Add the Topping:
  1. In another bowl, combine 2 cups granulated sugar and ½ cup unsweetened cocoa powder. Sprinkle this mixture evenly over the batter in the baking dish.
Pour Boiling Water:
  1. Carefully pour 3 cups of boiling water over the sugar and cocoa topping. Do not stir.
Bake the Cobbler:
  1. Bake in the preheated oven for 35-40 minutes or until the top is set but the bottom remains gooey.
Cool and Serve:
  1. Let the cobbler cool for 15 minutes. Serve warm with a scoop of vanilla ice cream.

Notes

  • Do not stir after adding the boiling water—this is what helps form the rich chocolate sauce at the bottom of the cobbler.
  • Use high-quality unsweetened cocoa powder for the best results.
  • This cobbler is best served warm, but leftovers can be reheated.
