Ingredients

Cake Batter:
  • 🧈 ½ cup unsalted butter softened
  • 🍬 1 cup granulated sugar
  • 🥚 2 large eggs
  • 🌿 1 teaspoon vanilla extract
  • 🥛 ½ cup sour cream or plain yogurt
  • 🌾 1 ½ cups all-purpose flour
  • 🥄 1 teaspoon baking powder
  • 🧂 ¼ teaspoon salt
Peach Layer:
  • 🍑 2 cups sliced peaches fresh, frozen, or canned, drained
  • 🍂 ¼ teaspoon cinnamon
  • 🍬 1 tablespoon granulated sugar
Crumb Topping:
  • 🌾 ½ cup all-purpose flour
  • 🍬 ¼ cup brown sugar
  • 🍬 ¼ cup granulated sugar
  • 🧈 ¼ cup unsalted butter cold and cubed
  • 🍂 ½ teaspoon cinnamon

Method

Preheat the oven:
  1. Set the oven to 350°F (175°C). Grease and flour an 8x8-inch baking pan.
Make the cake batter:
  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the eggs, one at a time, then add vanilla extract and sour cream.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
Prepare the peach layer:
  1. Toss the sliced peaches with cinnamon and sugar. Set aside.
Make the crumb topping:
  1. In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
Assemble the cake:
  1. Spread the cake batter evenly into the prepared pan.
  2. Layer the peaches evenly on top of the batter.
  3. Sprinkle the crumb topping over the peaches.
Bake:
  1. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean and the topping is golden brown.
Cool and serve:
  1. Let the cake cool for at least 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use fresh peaches when in season for the best flavor. Canned or frozen peaches work well, too—just be sure to drain them thoroughly.
  • Add a drizzle of vanilla glaze or a scoop of vanilla ice cream for extra indulgence.
  • Store leftovers in an airtight container for up to 3 days.
