Ingredients

For the Bread:
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon grated orange zest
  • 1 ½ cups fresh cranberries
  • ¼ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg
  • ¾ cup orange juice
  • ½ cup chopped nuts optional
For the Glaze:
  • ½ cup confectioner's sugar
  • 1 tablespoon orange juice

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. Mix Dry Ingredients: In a bowl, combine flour, baking powder, baking soda, and salt. Stir in orange zest and cranberries.
  3. Cream Butter and Sugar: In another bowl, beat the butter and sugar until light and fluffy. Add the egg and mix well.
  4. Combine Mixtures: Alternately add the flour mixture and orange juice to the butter mixture, starting and ending with the flour. Stir in nuts if using.
  5. Bake: Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Glaze: Cool in the pan for 10 minutes, then remove to a wire rack to cool completely. Mix glaze ingredients and drizzle over the cooled bread.

Notes

  • Variations: Consider adding a teaspoon of vanilla extract or a pinch of cinnamon for extra flavor.
  • Storage: Wrap the bread tightly in plastic wrap to maintain freshness. It can be stored at room temperature for several days or frozen for longer storage.
