Ingredients

Protein
  • 900 g boneless skinless chicken breasts
Dairy
  • 225 g cream cheese softened and cut into cubes
  • 225 g sharp cheddar cheese freshly shredded
  • 240 ml heavy whipping cream
Liquid
  • 120 ml low sodium chicken broth
Vegetables
  • 600 g sweet corn kernels frozen or drained canned corn
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
Spices
  • 5 ml smoked paprika
  • 5 ml onion powder
  • 5 ml garlic powder
  • 5 ml dried parsley
  • 5 ml salt
  • 2.5 ml freshly ground black pepper
  • 1.25 ml crushed red pepper flakes optional
Herbs
  • 30 g fresh parsley finely chopped for garnish

Equipment

  • Slow cooker Essential for low and slow cooking.

Method

Zubereitung
  1. Lightly grease the slow cooker to prevent sticking and ensure even cooking.
  2. Place the chicken breasts evenly at the bottom. Season with spices and top with chopped onion, minced garlic, sweet corn, and broth. Layering is crucial for flavor distribution.
  3. Cover and set the slow cooker to low for 5 to 6 hours. The chicken should be tender and easily shredded with forks, ensuring juiciness and flavor.
  4. Shred the cooked chicken directly in the pot, then mix in the cream cheese and cheddar. Stir until the cheese is melted, forming a smooth, creamy sauce.
  5. Transfer to a serving dish and garnish with finely chopped parsley for freshness. The dish should look rich and inviting.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth to maintain creaminess.
