Ingredients

For the Choux Pastry Cones:
  • 250 ml water
  • 70 grams butter
  • 150 grams all-purpose flour
  • 4 eggs
  • ⅛ teaspoon salt
For the Peach Cobbler Filling:
  • 2 cups diced peaches
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
For the Cheesecake Filling:
  • 400 grams cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 200 ml heavy whipping cream

Method

  1. Prepare the cones: Preheat the oven to 400°F. Boil water with butter and salt. Add flour and stir until a dough forms. Cool slightly, then add eggs one at a time. Pipe into cone shapes and bake until golden.
  2. Make the peach cobbler filling: Combine peaches with brown sugar, cinnamon, and nutmeg. Cook until peaches are soft and the sauce has thickened.
  3. Prepare the cheesecake filling: Beat cream cheese with powdered sugar and vanilla until smooth. In another bowl, whip the heavy cream to stiff peaks, then fold into the cream cheese mixture.
  4. Assemble: Fill each cone with layers of peach cobbler and cheesecake fillings. Chill before serving.

Notes

  • Cones can be made ahead and stored in an airtight container.
  • For a lighter version, substitute half of the cream cheese with Greek yogurt.
